Looking for easy summer meals to have your teens make on a summer movie night or just an easy meal the kids can make on those special evenings when mom just doesn’t feel like cooking. You have found a perfect choice. One of my son’s favorites is the Sourdough Parmesan Grilled Cheese Sandwich. This isn’t just any plain grilled cheese. The Parmesan gives it that special touch that makes it mouth-watering. You’ll never have another grilled cheese any other way, but this for now, on promise.

How to Make:

Prepare all 6 slices of sourdough bread by spreading ½ Tbsp of butter evenly (little on the heavy side).

Next, sprinkle a generous portion of parmesan on top of the buttery side of each slice of bread. Turn the Griddle Grill on Medium/Low heat grill should be about 275*F. Immediately add all the sliced bread buttery/ Parmesan side down on grill.

Add cheese combo to the bread. I like toone of each kind, One slice of American Cheese and one of the Pepper Jack Cheese slices. . .My son takes one of two slices of the American Cheese. Add the second slice of sourdough bread on top and flip the sandwich over to start the golden-ing process on both sides.

Tip, is to cook slow on low to crisp out bread while keeping the cheese hot enough to melt it evenly to perfection.

With the spatula, press down firmly on the sandwich. Mashing it sort of flattening the bread down. Continue flipping until both sides of the sandwich are golden brown, toasted crispy parmesan outer crisp.

Key to this process is to keep the heat at medium/low and flip often to to create that crispy golden outer with a cheesy, gooey center.

Cut the sandwich in half and serve with my favorite, Campbell’s tomato soup.
