Overnight Blueberry French Toast Preparation
Preparation time: 30 minutes
Inactive time: 8 hours or overnight
Baking time: 1 Hour 15 minutes
Serves: 12
Ingredients:
- 1 loaf French bread, preferably day-old and or stale, cut into 1-inch cubes
- 2-8 oz packaged Cream Cheese
- 1 cup fresh blueberries
- 12 large eggs, beaten
- 2 cups whole milk
- 1 teaspoon vanilla extract
- 1/3 cup maple syrup
Sauce Ingredients:
- 2 tablespoon cornstarch
- 1 cup fresh blueberries
- 2 Tablespoons cinnamon
- 1 cup granulated sugar
- 1 cup water
- 1 Tablespoon butter
- Powdered sugar, for dusting (optional)
Instructions:
- Grease a 9×13-inch baking dish with butter or cooking spray.
- Spread half of the cubed French bread evenly in the prepared baking dish. Top with 1 inch blobs of cream cheese.
- Sprinkle 1 cup blueberries evenly over the bread cubes. Top with the remaining bread cubes.
- In a large mixing bowl, whisk together the eggs, milk, vanilla, and maple syrup. Pour evenly over the entire bread cubes.
- Pour the egg mixture over the bread and blueberries, making sure to evenly coat all the bread cubes.
- Press down gently on the bread to ensure it is soaked in the liquid. Cover the baking dish with plastic wrap and refrigerate overnight or for at least 8 hours.
- Remove bread mixture from refrigerator an hour before baking.
- Preheat your oven to 350°F (175°C).
- Cover with foil and Bake the French toast casserole in the preheated oven for 30 minutes. Remove foil and continue to cook 25-30 more minutes, or until the top is golden brown and the center is firm
- Remove the casserole from the oven and let it cool for a few minutes before serving

In medium saucepan, mix sugar, cornstarch, and water. Bring to a boil. Cook 3-4 minute, stirring constantly. Mix remaining blueberries and reduces heat to simmer for 10-15 minutes until berries burst. Stir in the butter and pour over top of baked French toast Casserole and serve
